This year’s herring is ‘nice and fat’ but a little more pricey
The Dutch herring season starts next Wednesday and this year’s catch is described as extremely creamy and easy to skin, due to its very high percentage of fat, news website Nu.nl said on Friday.
In addition, the fish are likely to be more expensive than in recent years because of higher transport, energy, personnel and packaging costs, Nu.nl said.
The young herring can only be given the Hollandse Nieuwe moniker up to the end of August and must have a fat percentage of at least 16%. This year’s supply is around 22% fat, Nu.nl said.
